Simple Egg Salad

There are two foods that are a favorite in this house, eggs and bacon. This simple egg salad recipe is very quick and with just a couple of spices gives a nice fresh flavor. The egg salad tastes great in a salad cup or on a low carb bread. I also love to make this for a day trip as the whole family likes it including my 2 year old.

I started with 9 hard boiled eggs. The reason for the odd number, was simply this is was the amount I had in my fridge. You can adjust the number to whatever you have in stock.

I have this nifty device that chops for me, all I have to do is place the food on the square, and push the lid down and it chops it for me, so my simple egg salad is done from start to finish in my chopper in a matter of seconds.

I added a stalk of celery and chopped it down with my chopper.

That was all the chopping I did, I then added 2 tbsp of mayo and 1 tbsp of Dijon mustard and gave it a nice stir.

I added a 1/2 tsp dill and 1/4 tsp paprika and salt to taste and gave it another good stir.

That was it, a great nourishing lunch in a jiff! If you want to jazz it up even more, add a couple of strips of crispy bacon to the mix, yummy! If you don’t like mayo, you can use full fat Greek or whole milk yogurt instead.

Ingredients
  1. 9 Hard boiled eggs
  2. 1 Stalk celery
  3. 2 Tbsp mayo
  4. 1 Tbsp Dijon mustard
  5. 1/2 tsp dill
  6. 1/4 tsp paprika
  7. Salt to taste
Instructions
  1. In a large bowl chop down your hard boiled eggs.
  2. Chop down the stalk of celery.
  3. Add the mayo, Dijon mustard, dill and paprika and stir together.
  4. Salt to taste and stir again.
  5. Enjoy!
Notes
  1. You can add a couple of strips of crispy bacon for added flavors.
  2. If you don't like mayo, you can substitute with full fat Greek or whole milk yogurt.
