No Cook Homemade Tripple Berry Ice Cream
The title no cook homemade triple berry ice cream is a mouthful, but a delicious guilt free one. Every time the sun comes out my brain screams for ice cream. I believe it is from my Iceland days where the sun was a rare phenomenon and every time it came out it felt like ice cream time. I mean, we had to cool down somehow right? This no cook ice cream is not only quick, but will completely satisfy my cravings for this type of treat.
The dessert takes about 5 minutes to make with a tiny bit of day before preparation. As long as your ingredients are frozen and cold, you are good to go.
I started with 2 cups of frozen strawberries, blueberries and blackberries and added to my food processor. I bought a bag of organic mixed berries at Costco so I always have them available in my freezer.
This part was my real preparation, I had previously cut down a ripe banana and frozen. I used one cup. If you like your ice cream sweeter, add a little more banana. I used a 2 to 1 ratio.
I got a good grip on my food processor, warned my kids mommy is going to be loud, and turned it on high. I had to scrape down the sides a few times before the mixture became smooth.
As in the picture above the mixture will first become rough before it will get the swirly ice cream feel. It does take a bit of processing to get it to an ice cream form. When it got smooth, I added 3 tablespoons of coconut milk that had been sitting in my fridge overnight. I took it out 5 minutes before I wanted to use it so it softened up a bit. I used the fatty parts not the water.
I shouted my final warning to the little ones that mommy will be loud, and mixed the coconut milk well together with the berries.
There you have it, 5 minute no cook homemade triple berry ice cream ready to eat right after making. This made a good size batch for me that I estimate is at least for 4-6 people.
- 2 cups frozen mixed berries
- 1 cup frozen bananas
- 3 tbsp cold full fat coconut milk
- In a food processor mix together the berries and bananas.
- When smooth add the coconut milk and mix well together.
- Serve and Enjoy!
- 3 tbsp of coconut milk gave a hint of coconut flavor for me, if you want more or less, just adjust that amount.
