Grass Fed Burger

 

From my carb days I used to love a nice juicy bacon cheeseburger. Not just any burger, I didn’t like those thin weird tasting fast food burgers, I wanted burger made from real beef (not pink slime) with juices flowing out of it when you bite into it. Despite the fact that I can’t have carbs now, I most certainly can have my cheesy grass fed burger that just melts in your mouth at home. This recipe is especially great for those trying to get into or maintain ketosis, or just on a simple low carb high fat diet. You don’t need any breadcrumbs for this recipe so it is gluten free as well.

This makes 4 burgers.

I added my ground beef in my mixing bowl. I use grass fed beef that is approximately 80/20 fat content.

Next I added 1 egg and a 1/2 cup of shredded cheese, you can use whatever cheese is your favorite or on hand. Feta cheese would be awesome in it as an alternative taste.

Then I got my (clean) hands in there and mixed it all together. Don’t be afraid to get your hands dirty this is the best way to mix it properly. I would’ve used sanitary gloves but my toddler decided to spread them all over the floor so  now they are only used for exceptional dirty messes only a 2 year old can make, not food preparation.

Now your mixture should have the cheese and egg evenly mixed together. You can always add other things in there, I have before added bacon, add some jalapenos if you like it spicy or whatever comes to mind. Just don’t skip the cheese (unless you are dairy free Paleo) as it adds to the fat content and moisture.

I then formed my blob of meat into 4 even sized patties, and gave them generous helpings of salt and pepper. I let them sit until they reached room temperature,  normally takes about an half an hour to an hour (if you didn’t plan ahead like I normally don’t and take out the ground beef ahead of time). This is when I prepare my side dishes and salad.

I put the burgers in the broiler for 5 minutes. I like them done with barely any pink in the middle, if you like them a little more rare, you can adjust the time accordingly. After 4-5 minutes I took them out and flipped them over and added my freshly cut mozzarella cheese on top and put back in the oven for 5 minutes.

I like my cheese on top to be a little brown which happened for me after 5 minutes on this side as well. Then as always with any meat I prepare I let it sit for at least 5-10 minutes before eating to let it continue cooking and retain the juices.

Enjoy the burger with a side of carrot fries and I like to add some spinach on top along with a nice crispy piece of bacon. If you are hungry for hamburger bun with it I sometimes make an oopsie to go with it for the illusion of a bun. Keep in mind the oopsie is very flaky and doesn’t work very well as a bun, but tastes pretty good with the burger in my opinion.

Serves 4

Ingredients
  1. 1 lbs ground beef (preferably grass fed)
  2. 1 egg
  3. 1/2 cup shredded cheese
  4. 4 slices of fresh mozzarella
  5. Salt and pepper to taste
Instructions
  1. In a big bowl mix together the beef, egg and shredded cheese
  2. Form into 4 patties, let sit out until they reach room temperature
  3. Use salt and pepper and whatever other spices you like
  4. Broil for 4-5 minutes one one side
  5. Flip the burgers over and add your mozzarella slices
  6. Broil for another 4-5 minutes
  7. Let sit for 5-10 minutes to let the juices set
  8. Enjoy
