Easy tuna salad

As I have mentioned before I am not big on fishy type of food but this easy tuna salad is something I can eat for lunch every day of the week. I grew up eating a lot of fish and got turned away from it. Grudgingly knowing it is good for me I have started a personal campaign to make fish taste good. Serve it on an oopsie or just over your favorite greens.

I choose wild planet’s wild albacore tuna for my salad, I feel like they have the best quality and best taste. I have looked at tuna from a can before and it could just as well be cat food.  Quality in food is everything, it makes your food taste better and is normally better for your body as well. This tuna is packed with omega-3 fatty acids which we all know is good for us.

I started with draining my tuna, originally all over my counter, then in the sink and put the fish into a medium sized bowl.

Then I went to town with flaking it apart with two forks until I was happy with the texture.

I finely chopped down my onion, celery and apples.

I let the chopper do the work for me with the almonds (you can also do it by hand or in a food processor)

added everything into the bowl.

Topped it with 3 1/2 tablespoons of mayo.

I cut a lemon in half and squeezed the juice from one of the half carefully making sure no seeds got into the mix.

This is when I mixed it all together with a spoon.

When it is all nicely mixed, add your salt and pepper to taste, remember start small cause you can always add to it.

There you have it, an extremely easy scrumptious tuna salad you can enjoy in a lettuce wrap or in a coconut pancake or as a tuna fish flax meal sandwich.

Ingredients
  1. Two 5 oz can's of Tuna
  2. 1/2 cup diced red onion
  3. 1 stalk celery
  4. 1/2 cup diced apples
  5. 1/4 cup chopped roasted almonds
  6. 3 1/2 tablespoon mayo
  7. Juice from a half a lemon
Instructions
  1. Drain the tuna and put in a medium sized bowl
  2. flake it with two forks until you are satisfied with the texture
  3. chop down the onion, celery, apples and almonds and add them to the bowl
  4. top the mixture with the mayo
  5. squeeze the lemon on top of everything making sure there are no seeds that drop down
  6. Mix everything together, salt and pepper by taste
  7. Enjoy!
