Sugar snap peas with caramelized garlic seared in grass fed butter

In this house we eat sugar snap peas 2-3 times a week. It is well deserved by Mr. Vincent and our 2 year old enjoys opening up the pod and picking out the peas. This side dish goes well with just about any meat and fish you cook up. I have even served it with a hamburger with no complaints from the rest of the clan. I cook up a pound of sugar snap peas at a time which seems to be enough for 4 small portions.

The most time consuming process of this side dish is cutting off the ends of the sugar snap peas. It takes me about 10 minutes, but the maximum I can do is 3 peas at a time without cutting one in half.

I roughly chopped up 3 cloves of garlic. I like the pieces a little bit bigger then minced as the garlic adds a lot of flavor to the peas. If you aren’t as big on garlic as I am, use less and minced.

I added the garlic into a pre-heated pan to medium heat with about 2 tablespoons of grass fed butter already melted in the pan and gave it a quick stir.

Before the garlic browned up, I added the sugar snap peas and gave it a generous helping of salt. I stirred the peas and made sure they were all coated in the butter and garlic.

When I saw the garlic become brown I lowered the heat to medium low, stirring occasionally. The goal was to get a little browning on the sugar snap peas while the garlic was caramelizing in the grass fed butter.

I finished off the caramelized garlic sugar snap peas with a sprinkle of sea salt and served hot!

Ingredients
  1. 1 lbs Sugar snap peas
  2. 3 cloves garlic
  3. 2 tbsp grass fed butter
  4. Salt to taste
  5. Sea salt for a finishing taste
Instructions
  1. Wash and cut the ends of the sugar snap peas.
  2. Roughly chop up the garlic.
  3. Melt the grass fed butter in a large pan over medium heat.
  4. Add the garlic and give a good stir to mix with the butter.
  5. Before the garlic browns, stir in the sugar snap peas and give a generous helping of salt.
  6. When the garlic starts to brown, lower the heat to medium low to prevent the garlic from burning.
  7. When you have nice searing lines on the sugar snap peas sprinkle over a pinch of sea salt and serve hot.
  8. Enjoy!
