Brown Butter Cream sauce

I love a good sauce to pour over my meat and vegetables, and this one is amazing. It is quick and easy to make, just let it simmer while you cook your main meal. The brown butter cream sauce is the perfect keto sauce, very high fat and very delicious.

I started with browning 4 tablespoons of butter on my pan. The best way to brown butter is to swirl it in the pan, not stir it.

Mmm, butter! When it reached golden color I poured it over to a sauce pot that was already hot on medium low heat.

I chopped up 1 clove garlic and added to the sauce. Be careful, it will bubble and fizzle up on you.

I then added 1/4 cup of chicken stock and 1/3 cup of cream.

I gave it a good stir until it was all combined and looked more like this. Butter sauces can be difficult as they will separate on you, nothing a good stirring can’t fix!

I added 1/2 teaspoon of salt and 1/2 teaspoon of pepper for bolder flavor. You can decrease or increase that amount for your own taste buds.

I gave it another stir, lowered the heat down to simmer and let it sit with occasional stirring until it thickened, about 5-10 minutes.

The Brown butter cream sauce is amazing with fish, especially salmon or other types of meat like chicken and pork. If you need more flavor to your vegetables, pour it over and enjoy!

I tried this recipe thinking I would have nice left over (you say serves 6) but….I barely had enough to compliment our dinner my husband and I. No left over….Are the measurements ok?….should it be more liquid to start with?. In the meantime I will look for another recipe because I like my meals saucy 🙂

    • Vala Vincent says:

Yes the measurements are correct. Each to it’s own. Making sauces and gravy’s in low carb is very difficult since we can’t use flour to thicken it. I too used to love drenching my food in gravy, but I have learned to pull back. I’m not a big fan of having to make up serving sizes as everyone is different. But in order to get an idea of the carb content, I have to 🙂 Just double or triple the recipe to have enough for what works for your family.

I made this tonight, except I quadrupled the recipe and left out the salt and pepper. So glad I did as I used salted butter. Anyway, HUGE success with the family. I do all the cooking for my family, and since I’m doing keto, they eat what I make. 🙂 I made some keto meatballs too. My wife, who is quite picky, said it was one of the best meals I’ve ever made! Will definitely make this again!

KETO MEATBALLS – WHAT do you use for the binder? crushed rinds are soggy and tasteless…other subs are too carby for me.

I made some keto meatballs last night which turned out well!
        I used 1lb mince
        1/4c almond flour
        1 egg
Worcestershire sauce, S&P, Parsley, garlic & onion powder.
Fried them up in some butter and they turned out well 🙂

I love my keto meatballs, and so does my non keto family. I use parmesan cheese, ground chia seeds, an egg, and some coconut flour, plus seasonings in mine.

I looked up a butter sauce on google and was so happy to find that there was specifically a KETO butter cream sauce! Usually, I’m not too optimistic about everything I google to be in keto format. I usually search something that sounds fatty and hope I can readjust it accordingly to fit keto. This recipe was perfect. I had everything on hand and it was actually quite tasty. I used garlic powder instead of fresh garlic for ease and to restrict an extra 1-2 carbs. I also halved the recipe, no problem. I added it on top of my turkey and I used it mixed in sauteed spinach as well. Thanks for the recipe!

    • Vala Vincent says:

That depends on the brand of ingredients you use. For the most part you should be very safe to get similar carb count no matter what brand you use. It should be about 1 gram of carbs.

  4. Shawndra says:

Delicious! I added a bit of thyme and used it over grilled chicken. We were practically licking our plates!

  5. Michelle says:

Two questions for you. As a fan of not doing tons of dishes, why would you brown the butter in a pan first then pour it into a saucepan? Also, I made this for the first time the other night and doubled it. My sauce didn’t thicken at all. I even added around a cup of shredded cheese. While this was still amazingly delicious, it was more soup than sauce. (we poured it in a bowl over pulled pork and steamed broccoli and it was delicious.) Have you run into this before?

  6. Stacie Allred says:

This was delicious, but the sauce never really got as thick as I had hoped, even after simmering for close to 20 minutes.
