5 Minute No Cook Lunch Salad

If you are like me, then the thought of salad means you will be hungry after an hour or you have to add bread with it to fill you up. Little did I know in my carb days that I could make a delicious salad for lunch, using healthy ingredients and it would fill me up until dinner time. These days I am a big fan of quick and easy with minimal clean up, this 5 minute no cook lunch salad is the perfect match.

The amounts that I used here were enough for 2 lunches for me, so I will say it serves 2 people. We are all different, and I know my husband would’ve needed more so adjust to what fit your needs.

I used a few leaves from a heart of romaine, washed and just tore it in pieces with my hands.

I added 1 red bell pepper that I had roughly chopped up in pieces.

I put in a whole can of tuna, I didn’t bother to drain it, I just shredded it in the can with a fork and dumped it in there.

I love nothing more then feta cheese in salads, so I put what is the appropriate amount for me (about 1/4 cup). You can use whatever cheese you favor most.

I drizzled 3 tablespoons of olive oil over the whole thing.

Salt and pepper to taste and mixed it all together.

There you have it, 5 minute no cook lunch salad. I use tuna cause it is quick, if you have other type of protein lying around you can use that instead.  For busy parents, work, school, whatever your thing is, it is quick and it is easy and it is delicious!

Ingredients
  1. 1 heart of romaine
  2. 1 red bell pepper
  3. 1 can tuna
  4. 1/4 cup feta cheese (or a cheese of your choice)
  5. 3 tbsp olive oil
  6. salt and pepper to taste
Instructions
  1. Wash and tear up the heart of romaine.
  2. Add all other ingredients to a medium size bowl.
  3. Mix together.
  4. Enjoy!
